The whole idea of this app/book is based on the color red.   While visiting my son, many (like 7 or 8) years ago, Jason handed me a glass of red wine, asked me to sit in full view of he and Li’s 5’ x 5’ New York kitchen.  Watching him be so comfortable in the kitchen makes me really proud.  Just check out the video.  He and his fiance’ have a really well-equipped kitchen for such a small one and Jason moves about it like a pro.  Granted he worked in a few restaurants but not for long periods of time.  He learned cooking on his own, and maybe some of my time spent in the kitchen while he was growing up rubbed off on him.

He started to prepare the meal which he announced to me was going to be a RED meal.  On the menu was lamb chops with a red wine reduction, roasted red beets, raddichio salad and raspberry sorbet for dessert…and he prepped most of it on the red Corian cutting board I had given him.  Red is probably my favorite color if I had to choose only one–for certain things anyway, ie. kitchen accents, reading glass frames, plates, sweaters, walls, all sorts of stuff.  Things colored red but I don’t know I ever gave it a thought to cook an entire meal focusing on just one color.  Hmmm.  That intrigued me and I thought it was very clever.  In our conversation I said to Jason, “You must have impressed a lot of women (before you and Li) with your cooking?”.  He replied, “Ya Ma, cooking impresses chicks”.  I couldn’t get that phrase out of my head for the longest time.  He was so right on.  I’ve had men cook for me, and maybe because I am a seasoned cook it is so much more appreciated, but the meal Jason made was outstanding and I was totally impressed.

When writing this chapter, COLOR ME SEXY it just sounded like such a fun thing for any chick to have created for her.  Wow, if he even remembered what your favorite color is, you’d be impressed, right?  But to create an environment and a meal around it?  Over the top impressive.

Our suggestions are simple and easy to achieve.  Purple Thai Chicken w/ Purple Slaw, Stuffed Yelow Pepper w/Grilled Yellow Squash and Grilled Flank Steak w/Veggie Salad and Chimichurri Sauce.  We had a hard time coming up with blue food that looked tasty and tasted good, but you’ll need to use your imagination for this color–well all the other colors of the rainbow for that matter.  Know that it can be just a simple flower or candle too, but the more effort the bigger the reward.

As Chef Mike says in this chapter on the app –  “No need to go too far by painting the dinning room or buying new sheets.  Obsessiveness is never sexy.”

But what is sexy is that you actually cam up with the idea of cooking a meal around her favorite color.  I don’t know a girl young or old that wouldn’t love that you took the initiative to do this.

Download the app on any iPhone, iPad or iTouch.  Go the the iTunes APP store and search for Cooking To Impress Chicks – The Field Guide for the Culinary Casanova.

CUDDLING AND A MOVIE

4 Jul

ImageNot sure about you but I love this kind of date.  Being comfy in your own home or your sweetheart’s place.  Movies and food.  Yes!  There is one thing however that needs to be established here—what kind of movie will you watch together?  Not always an easy choice.  He might like adventure, she might want a chick flick…complete with gushy romantic scenes.  She might even cry.  But you will have it all worked out with the best snack food available, her favorite libations and a cushy sofa with pillows plumped when she arrives for movie night.

Best to confer with the movie choice.  Once that is settled, start thinking about the food that may blend well with the theme of the movie.  Not necessary, but really thoughtful and she will no doubt love the thought that goes into it.  For instance, how about some Chinese dumplings or pot stickers for a Jackie Chan movie?  Or you could be really inventive and come up with some zombie food for World War Z.  Not sure what that looks like, but I’m sure there must be something that can be easily made and creative.  Scary movies actually ramp up the dopamine and can create intimacy where she may have to snuggle up close to feel safe.  Woman usually like to feel safe.

We have some great snack food recipes, like the honey & rosemary popcorn featured here on the app.  This is delicious and sure to be a big hit.  You can add some roasted peanuts and you’d almost have something like Cracker Jacks.  You don’t want to have to prepare something that will take a lot of time for this date.  Repeat stopping and starting a movie to go to the kitchen is never fun.  It can be downright irritating, especially if in the middle of an important scene.   So prepare as much as you can before she arrives.

Make movie night a weekly thing at your house…or hers.

OH POOR BABY

OH, POOR BABY – Casseroles and comfort foods

You make a morning call to her and she says in a meek voice, “I just don’t feel very well, so I don’t think I want to go out to dinner tonight.”  Although this may be disappointing, now is your chance to really step up the game in showing her you care and are listening.   Either invite her over or cook something comforting for her and deliver it right to her bedside.  It may just be that time of month where she feels uncomfortable or has been experiencing some other pain, having a home-cooked meal will help anyone feel better.  You can keep it really casual.

chik+n+dump2Pictured here is the Chicken & Dumplins’ that Chef Mike has whipped up.  It has a thick gravy with mushrooms and green peas — comfort food for sure.   The other recipes in the iPhone APP Cooking to Impress Chicks are just as soothing for that special person who doesn’t feel well.  How about the old tried and true macaroni & cheese.  Chef Mike put together the recipe for a creamy version of this at the same time developing the recipe for Meatloaf With Mushroom Gravy.  Pick any one of these dishes and you will make a big hit with the girl who is having a bad day.

What if she got fired from her job?  Broke a foot?  Has the flu?  (You might want to read the blog at www.roseskitchen.com about Chicken Soup for the flu, but any of those other ailments can make a day much better if someone cares enough to make a meal based on this chapter.

A word about not over doing it.  Sometimes we just want to be alone when we don’t feel well.  Be creative and deliver the meal to her door.  Going a little extra with a flower or two will go a long way also.  What would make you feel better may not work for her but try to please.  It will work in you favor later on–guaranteed.

CHUG ME, HUG ME, DON’T LET ME DRIVE

Meals Based on Cocktails

When most people think of pairing a meal with a tasty beverage they focus their attention on wine.  In my neck of the woods, northern California, beer is often thought of in that process as well.  Sierra Nevada Brewery’s main location is located here in Chico.

There are many beer aficionados in this area, and even gluten-free beers are cropping up as well and some of them host beer pairings with specialty dishes.  I know from experience that some beers and wines just taste better if paired with the right food, and vice versa, many recipes taste better with certain beers and wines.  All up to your particular taste.  But what about spirits?  Hard liquor with dinner?  Other than the common champagne paired with crab or lobster, I can’t think of a lot of prepared dishes that would be complimented by a good cocktail.  Cocktails for me are sipped slowly before or after the meal.  So this was really challenging for Chef Mike when we had to come up with CHUG ME, HUG ME, DON’T LET ME DRIVE as one of the chapters in the book/app.  The idea was to have a meal based around a certain cocktail.

Alcohol in a recipe is one thing and eating a meal with alcohol as an accompaniment is another.  In the cooking process most of it dissipates into thin air, although according to Ochef – “James Peterson, a cookbook writer who studied chemistry at the University of California at Berkeley, mentioned it in his encyclopedic cookbook, Sauces (Canada, UK). He says you need to cook a sauce for at least 20 to 30 seconds after adding wine to it to allow the alcohol to evaporate. And there is some sense to that, since alcohol evaporates at 172°F (78°C), so any sauce or stew that is simmering or boiling is certainly hot enough to evaporate the alcohol.”  (Note:  I interviewed James Peterson on my radio show, Mama Rose’s Kitchen, KZFR 90. fm radio a couple of years ago.  He’s written some great cookbooks and really knows a whole lot about food…check out his book Cooking.)  The meal with a cocktail as the focus is a little harder to come up with as a pairing.  Depending on the sweetness or tartness of the drink is one of the first things to consider.

In our book/app, Cooking To Impress Chicks Chef Mike gives a few recipes which utilize rum, bourbon and sparkling wine.  Not all in the same recipe of course, but the Pork Cub Libra; Sliders With Southern Punch and Crab Louie with Sparkling Wine all are fantastic recipes to try for sure.  He also says in the chef notes, “Get her drunk…enjoy the slow seduction that alcohol provides.”  There is a lot more information in this chapter, but you’ll have to download the app or wait for the published book to get it.

Dinner at your house with the idea of drinking a lot is something you should really alert the date about since one might have to plan way ahead for this type of dinner.  Depending on the level in which you and your date are at when you try this experience will determine the outcome.  You don’t want her to feel trapped by any means.  By that I mean if she really wants to go home, then by all means get a cab for her and pay for it.  Just because you both ‘have a heat on’ doesn’t mean you are going to get laid.  And I am sure that this might be a big motive for even considering this chapter, but be prepared for some disappointment just in case.  Drunk and sloppy sex is never a great way to fully impress someone, not in my opinion anyway.  Don’t get me wrong, when everything feels right, and she feels safe, getting liquored up can be barrels of fun, just keep safe, and keep it sweet.

WAKE ME, BAKE ME, TAKE ME – Breakfast in bed?

29 Nov

ImageI realize lots of guys don’t know how to cook much less bake bread or a coffee cake.  But really, is there anything better than breakfast in bed served up by your favorite bed partner?  I don’t think so, especially when a few details have been adhered to like a pretty little flower on the tray, or the perfectly cooked bacon side.  So this chapter really cuts to the chase.  It already indicates that you’ve been intimate with someone and breakfast in bed is the second course to a loving experience.  So fluff up her pillows and get out into the kitchen.

Like Chef Mike says about this chapter, “you may be one of the lucky ones in that your gal likes football and this can turn Sunday mornings into a fun day from breakfast until dinner time.”  Maybe the whole day in bed, who knows?  This chapter is breakfast or brunch, but there are plenty of snacks, lunch and dinner ideas if it turns into a full day of eating, drinking and playing.

OR—maybe it is just breakfast, at the table.  That’s ok too don’t you think?  You call her a day or two before and tell her to show up mid-morning and when she arrives there are flowers on the table and a serving set for two that you’ve created.  Champagne may be served, or freshly squeezed orange juice or a mimosa (a mixture of both).  Nice.  Pretty good start I’d say.  You’re doing well, but what are you going to serve her?

Image

First of all, read up on what it says in this app to prepare your pad.  You know, take out the trash, wash your hands…blah blah.  Good to know and important to not forget.  After this, how about some Eggs Florintina?  Always a great dish and so easy to create.  Add some toast with butter and jam, a cup of coffee or tea and you will melt her heart.  A good breakfast to start the day is nourishing for the body and the soul.  If your gal is a vegetarian, vegan or gluten free then you’ll have to adjust to her needs.  In this day and age there are so many allergies and preferences of food that it is best to ask right off the bat about eating habits.  It would be really time-consuming and frustrating to cook up a beautiful meal only to find out upon her arrival that she is gluten free and that beautiful coffee cake you spent so much time to bake will give her hives or a stomach ache.  This is true for all of the chapters of COOKING TO IMPRESS CHICKS.

WILD THINGS – GAME ON

16 Nov

Image

Some chicks may love this chapter — even though we didn’t make it too exotic but cooking game, fish or wild birds can be a little tricky.  Some people just don’t like the gaminess of wild things, yet there are a lot of gourmets that eat every part of a critter.  In days of past that was the way of the world.  In COOKING TO IMPRESS CHICKS iPhone app however, we’ve given a couple good recipes for fish, quail and squash.  The story behind this chapter however began with Kristina and Jim.  Kristina lived in Berkeley and Jim in Montana where a long distance relationship ensued.  Jim being the hunter he was, snagged an elk with a muzzle-loader gun then proceeded to slaughter, tan, and process the meat.  He sent Kristina elk jerky and stakes cut from the catch.  She was so excited by this, her heart was quickly caught and kept by this gentle man.  They’ve been married for over twenty years now.

Living in northern California, there are hunters, fishermen and trappers galore.  Squirrel can often be served in a stew, salmon fresh from the river cooked up in a saute’ or smoked and even deer are plentiful for hunters during the season.  There are ducks, pheasants, quail and geese for the taking in this area as well.  The hunters often take them to the lockers to be dressed and processed unless they have the know-how to do this themselves.

When it comes to cooking this for your special girl you have a lot of choices.  You don’t necessarily have to hunt for your trout or buffalo, you can just visit your grocery store and buy it in a nicely wrapped plastic package.  Not the same, but much more convenient.

The entire meal can be cooked with WILD in mind.  Let’s say you decide on quail or cornish game hens.  These are small enough usually that one each makes a great meal.  Add some wild rice with cranberries and root vegetables and there is a meal created for the most finicky eater.  Of course you need to find out if your chick is a vegetarian in which case the Stuffed Acorn Squash is a good bet with a watercress or dandelion salad maybe some fingerling potatoes and this will be filling as well as a healthy choice.  Image
